Pioneer Woman Jalapeno Jelly Recipe

Ingredients
  

  • Liquid pectin: 2 pouches
  • Apple cider vinegar: 2 cups
  • Sugar Granulated: 6 cups
  • Jalapenos stemmed and chopped: 2 lbs
  • Food Coloring optional

Instructions
 

  • Dice jalapenos finely with a food processor.
  • Combine jalapenos and vinegar in a large pot.
  • Heat until boiling, then simmer for 10 minutes.
  • Strain the mixture into another pot, squeezing out the juice.
  • Return juice to the pot, add sugar, and mix well.
  • Heat until boiling, stirring constantly.
  • Add pectin when boiling vigorously, and keep stirring.
  • Boil for one minute, then turn off the heat.
  • Remove the foam from the jelly surface.
  • Pour hot jelly into clean jars, leaving space.

  • Wipe jar edges, and seal lids tightly.

  • Place jars in boiling water for 10 minutes.
  • Remove jars, and let cool before using.

Notes

  • Use fresh jalapenos for the best flavor.
  • Stir often to avoid burning.
