Boil water in a large pot.
Add salt to the boiling water.
Put pasta in and cook until soft.
This takes about 10 minutes usually.
Drain the pasta and set aside.
Don't overcook it as it bakes later.
Heat olive oil in a frying pan.
Add chicken pieces to the hot oil.
Season with salt and pepper generously.
Cook for 5-7 minutes until golden brown.
The chicken should be cooked through completely.
Remove chicken and set it aside.
Use the same pan for the sauce.
Add chopped onion and cook until soft.
This takes about 3 minutes only.
Add minced garlic and cook 1 minute.
Pour in cream and chicken stock slowly.
Stir everything together really well.
Add Italian herbs, salt, and pepper now.
Let it simmer for 5 minutes gently.
Preheat your oven to 180°C (350°F).
Mix pasta, chicken, and sauce in bowl.
Add half of the grated cheddar cheese.
Stir until everything is well coated.
Pour mixture into your baking dish evenly.
Sprinkle remaining cheddar cheese on top.
Add mozzarella cheese all over the surface.
Scatter breadcrumbs for a crunchy texture.
This makes the top golden and crispy.
Place dish in the preheated oven carefully.
Bake for 25-30 minutes until bubbly.
The cheese should melt and turn golden.
The edges will be bubbling nicely.
Remove from oven and let it rest.
Wait 5 minutes before serving it hot.
