- 2 cups long-grain white rice.
- 2 tablespoons vegetable oil.
- 1 small white onion chopped.
- 2 cloves garlic minced.
- 1 cup tomato sauce.
- 4 cups chicken broth.
- 1 teaspoon salt.
- 1/2 teaspoon cumin.
- Fresh cilantro for garnish.
Heat oil in your skillet over medium heat. Add the dry rice to the hot oil. Stir it constantly for five minutes. The rice should look golden brown.
Put the chopped onion into the skillet. Cook it until it becomes soft. Add the minced garlic and stir. Do not let the garlic burn.
Pour in the tomato sauce and chicken broth. Add the salt and the cumin now. Stir everything together very well.
Bring the liquid to a boil. Turn the heat down to low. Put the lid on the skillet tightly. Let it cook for 20 minutes.
Turn off the heat. Keep the lid on for five minutes. This makes the rice very fluffy. Use a fork to fluff it gently.
- Always toast the rice first. This prevents the rice from getting mushy.
- Use warm chicken broth. It helps the rice cook more evenly.
- Do not lift the lid. The steam does all the hard work.
- Add a squeeze of lime. It makes the flavors pop.
