Ingredients
  

  • 2 cups long-grain white rice.
  • 2 tablespoons vegetable oil.
  • 1 small white onion chopped.
  • 2 cloves garlic minced.
  • 1 cup tomato sauce.
  • 4 cups chicken broth.
  • 1 teaspoon salt.
  • 1/2 teaspoon cumin.
  • Fresh cilantro for garnish.

Instructions
 

  • Heat oil in your skillet over medium heat. Add the dry rice to the hot oil. Stir it constantly for five minutes. The rice should look golden brown.
  • Put the chopped onion into the skillet. Cook it until it becomes soft. Add the minced garlic and stir. Do not let the garlic burn.
  • Pour in the tomato sauce and chicken broth. Add the salt and the cumin now. Stir everything together very well.
  • Bring the liquid to a boil. Turn the heat down to low. Put the lid on the skillet tightly. Let it cook for 20 minutes.
  • Turn off the heat. Keep the lid on for five minutes. This makes the rice very fluffy. Use a fork to fluff it gently.

Notes

  • Always toast the rice first. This prevents the rice from getting mushy.
  • Use warm chicken broth. It helps the rice cook more evenly.
  • Do not lift the lid. The steam does all the hard work.
  • Add a squeeze of lime. It makes the flavors pop.
