Ingredients
  

  • 1 large Ham Hock
  • 500 g Frozen Peas
  • 1 large Yellow Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 1 large Leek
  • 1 liter Chicken Stock
  • 1 handful Fresh Mint
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions
 

  • Prepare the Ham Hock Place the ham in a large pot. Cover it with water. Boil it for two hours. This makes the meat very tender.
  • Sauté the Vegetables Chop your onion, carrots, and celery. Heat oil in a pan. Cook them until they are soft.
  • Add the Stock Pour the chicken stock into the pan. Let it simmer with the vegetables. This builds a great flavor.
  • Cook the Peas Add the frozen peas to the pot. Cook them for five minutes. Do not overcook them. They must stay green.
  • Blend the Soup Use your hand blender in the pot. Blend until the soup is smooth. It should look very creamy.
  • Shred the Ham Take the ham off the bone. Shred it into small pieces. Discard the fat and bones.
  • Combine and Serve Stir the ham into the green soup. Add fresh mint. Serve it while it is hot.
