- 2 pounds beef chuck cut in cubes
- 2 tablespoons olive oil
- 4 large potatoes peeled and cut
- 4 carrots sliced
- 1 onion chopped
- 2 garlic cloves minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons cornstarch optional
- 2 tablespoons water for thickening
Heat oil in a pot.
Cook beef pieces until brown. Remove them.
Cook onion and garlic in the same pot.
Add tomato paste. Cook for 2 minutes.
Put beef back in the pot.
Add potatoes and carrots.
Pour in the broth and sauce.
Add herbs, salt, and pepper.
Bring it to a boil.
Turn the heat down. Cover the pot.
Let it cook for 90 minutes.
Mix cornstarch and water.
Add it to the stew to make it thick.
Take out the bay leaf. Taste and add more salt if needed.
