- 14 oz fresh udon noodles
- 2 tbsp vegetable oil
- 1 medium onion sliced
- 2 carrots julienned
- 1 bell pepper sliced
- 2 cups cabbage chopped
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp mirin
- 2 green onions chopped
Boil udon noodles for 2 minutes.
Drain noodles and rinse with cold water.
Heat oil in large wok over high heat.
Add onions and stir-fry for 2 minutes.
Add carrots and bell peppers next.
Stir-fry vegetables for 3 minutes until tender.
Add cabbage and cook 2 minutes more.
Add drained udon noodles to wok.
Pour soy sauce, oyster sauce, mirin over.
Toss everything together for 3 minutes.
Garnish with fresh green onions before serving.
