Ingredients
  

  • 2 tablespoons olive oil
  • 1 big onion chopped
  • 1 green pepper chopped
  • 4 garlic cloves minced
  • 1.5 pounds ground beef
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can 15 oz crushed tomatoes
  • 1 can 15 oz tomato sauce
  • 1 can 15 oz kidney beans, drained
  • 1 can 15 oz black beans, drained
  • 1 tablespoon brown sugar
  • 1/2 cup beef broth
  • Optional toppings: cheese sour cream, green onions

Instructions
 

  • Heat oil in a big pot
  • Add onions and pepper. Cook until soft
  • Add garlic. Cook for 1 more minute
  • Add ground beef. Cook until brown
  • Drain extra fat from the pot
  • Add chili powder, cumin, paprika, and cayenne
  • Mix in salt, pepper, and brown sugar
  • Pour in crushed tomatoes and tomato sauce
  • Add beans and beef broth
  • Let it boil gently
  • Turn down heat and simmer 30 minutes
  • Stir now and then so it doesn’t stick
  • Serve hot with toppings you like

Notes

  1. Use lean beef to keep it healthier
  2. Let it cook longer for more flavor
  3. A little lime juice adds a nice taste
  4. Make extra and freeze for later
  5. Fresh garlic tastes better than garlic powder
