Ingredients
  

  • 1 pound of rotini or farfalle pasta for the base.
  • 1/2 cup of extra-virgin olive oil for the dressing.
  • 1/4 cup of fresh lemon juice for the tart zing.
  • 2 tablespoons of Dijon mustard for the spice.
  • 1 clove of garlic minced very finely today.
  • 1 cup of cherry tomatoes sliced in half.
  • 1 small cucumber diced into small cubes.
  • 1/4 cup of red onion chopped very small.
  • 1/4 cup of fresh parsley chopped for a garnish.
  • 1/2 teaspoon of kosher salt to season well.
  • 1/4 teaspoon of black pepper for a tiny kick.

Instructions
 

Boil the Salty Pasta

  • Fill a large pot with water and add a lot of salt. Cook the rotini for ten minutes until it is soft.

Rinse with Cold Water
