Ingredients
  

  • 4  Eggs (large)
  • 2 cups Carrots (finely grated)
  • 2 cups All-purpose flour
  • 1 cup  Vegetable oil
  • 1/2 cup Walnuts (chopped)
  • 2 cups Granulated sugar
  • 1/2 cup Pineapple (crushed and drained)
  • 1 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt

For Making The Cream Cheese Frosting

  • 1/2 cup Unsalted butter
  • 4 cups  Powdered sugar
  • 1 tsp Vanilla extract
  • 8 oz  Cream cheese

Instructions
 

For The Cake

  • Preheat the oven to 350°F (175°C), and grease the cake pans. Combine baking powder, salt, flour, sugar and cinnamon.
  • Beat eggs until fluffy; slowly add oil. Add carrots, pineapple, and nuts.
  • Gently mix wet into dry ingredients. Pour batter into pans evenly.
  • Bake for 25-30 minutes; check with toothpick.
  • Cool cakes for 10 minutes; transfer to a rack.

For The Frosting

  • Using an electric mixer, combine cream cheese, butter, and sugar.
  • Frost layers, the top, and the sides.
  • Optionally, add nuts or carrots on top.
  • Slice and serve your Saltgrass Carrot Cake!
