- 2 cups Carrots (finely grated)
- 2 cups All-purpose flour
- 1 cup Vegetable oil
- 1/2 cup Walnuts (chopped)
- 2 cups Granulated sugar
- 1/2 cup Pineapple (crushed and drained)
- 1 tsp Baking powder
- 1 tsp Ground cinnamon
- 1/2 tsp Baking soda
- 1/2 tsp Salt
For Making The Cream Cheese Frosting
- 1/2 cup Unsalted butter
- 4 cups Powdered sugar
- 1 tsp Vanilla extract
- 8 oz Cream cheese
For The Cake
Preheat the oven to 350°F (175°C), and grease the cake pans. Combine baking powder, salt, flour, sugar and cinnamon.
Beat eggs until fluffy; slowly add oil. Add carrots, pineapple, and nuts.
Gently mix wet into dry ingredients. Pour batter into pans evenly.
Bake for 25-30 minutes; check with toothpick.
Cool cakes for 10 minutes; transfer to a rack.
For The Frosting
Using an electric mixer, combine cream cheese, butter, and sugar.
Frost layers, the top, and the sides.
Optionally, add nuts or carrots on top.
