Ingredients

  • 2 cups of granulated sugar for the sweet structure.
  • 2/3 cup of light corn syrup to prevent crystals today.
  • 3/4 cup of water for the boiling base.
  • 1 teaspoon of pure cinnamon oil for the intense heat.
  • 1/2 teaspoon of red liquid food coloring for the look.
  • 1/4 cup of powdered sugar to coat the pieces.
  • A tiny pinch of salt to balance the spicy flavor.

Instructions

Prep the Baking Sheet

  • Line your baking sheet with a silicone mat. Make sure the surface is very flat and dry before you start today.

Mix the Sugar Base

  • Combine the sugar, corn syrup, and water in your saucepan. Stir over medium heat until the white crystals disappear.

Boil Without Stirring

  • Bring the mixture to a boil. Clip your candy thermometer to the side and wait for it to reach 300 degrees now.

Reach the Hard Crack

  • Once the liquid is 300 degrees, remove the pan from the heat immediately. The syrup should be very thick and clear.

Add the Spicy Oil

  • Wait for the bubbles to stop popping. Stir in the cinnamon oil and the red food coloring very carefully today.

Pour the Hot Liquid

  • Pour the red syrup onto your prepared baking sheet. Let it spread out naturally into a very thin and shiny sheet.

Let the Candy Harden

  • Allow the candy to sit at room temperature for one hour. It should feel very cold and hard like glass now.

Break into Shards

  • Use a heavy tool or your hands to snap the candy into small pieces. Dust with powdered sugar so they do not stick today.

Notes

  • Always use a candy thermometer for the most accurate results today.
  • Do not stir the syrup once it starts boiling to avoid crystals.
  • Use cinnamon oil instead of extract for a much stronger heat.
  • Be very careful when adding the oil as the steam is very spicy.
  • Use a silicone mat so the candy peels off very easily.
  • Store the shards in an airtight jar so they stay crunchy.
  • Add extra food coloring if you want a very deep ruby red.
