Ingredients
  

  • 2 lbs pork stomach clean it well
  • 1 teaspoon white vinegar
  • 1 lime squeeze the juice
  • 1 teaspoon adobo seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon onion powder
  • 1 packet Sazón with achiote
  • 1 bay leaf
  • 1/2 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped red pepper
  • 2 garlic cloves minced
  • 1 tablespoon olive oil
  • 4 cups water
  • Salt to taste

Instructions
 

  • Wash the pork stomach in cold water.
  • Rub with vinegar and lime juice. Rinse again. Cut into strips.
  • Boil 4 cups of water in a pot. Add bay leaf and pork stomach.
  • Boil for 45 minutes. Remove any foam on top.
  • Drain and rinse the pork. Set it aside.
  • In the same pot, heat olive oil. Cook onion, garlic, and peppers.
  • Add the pork back into the pot.
  • Add all the seasonings and Sazón. Stir well.
  • Pour in water. Let it cook slowly for 2 hours.
  • Stir sometimes. Cook until soft and full of flavor.
  • Serve hot. Add cilantro on top if you like.

Notes

  1. Clean the pork stomach very well.
  2. Use lime and vinegar to remove the smell.
  3. Add more water if it gets too dry.
  4. Cook it slowly for better taste.
  5. Stir it often so it doesn't stick.
