Ingredients

  • 2 pounds red seedless grapes.
  • 2 tablespoons olive oil.
  • 1 teaspoon kosher salt.
  • 3 sprigs fresh rosemary.
  • 1/2 teaspoon black pepper.
  • Optional: 4 ounces goat cheese.

Instructions

Heat the Oven

  • Preheat your oven to 400 degrees. This makes the grapes burst.

Clean the Fruit

  • Wash the grapes very well. Dry them with a towel. Wet grapes will not roast.

Mix the Ingredients

  • Put grapes in a bowl. Add oil and salt. Add pepper and rosemary. Toss everything to coat well.

Prepare the Pan

  • Line a pan with paper. Spread the grapes out. Do not crowd the pan. They need space to roast.

Roast the Grapes

  • Put the pan in the oven. Bake for 20 to 25 minutes. Look for wrinkled skins.

Cool and Serve

  • Take the pan out. Let them cool for five minutes. Serve them while they are warm.

Notes

  • Use fresh grapes for this dish.

  • Small clusters look very pretty.
  • Use high-quality olive oil.
  • It adds a nice flavor.
  • Watch the oven closely at the end.
  • You do not want them to burn.
  • Add a splash of balsamic vinegar.
  • It adds a nice zing.
  • Serve them with crusty bread.
  • They also pair well with chicken.
  • Store leftovers in the fridge.
  • They taste great cold too.
