Ingredients

  • 3-4 pounds beef eye of round roast
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 cup beef broth
  • 12 slider buns or small rolls
  • 1/2 cup mayonnaise
  • 2 tablespoons prepared horseradish
  • 1 cup shredded cheddar cheese optional
  • Pickles for serving (optional)

Instructions

Prepare the Roast

  • First, pat the roast dry. Use paper towels. This helps with browning.

Season the Roast

  • In a small bowl, mix. Combine garlic powder, onion powder, thyme, pepper, and salt. Rub olive oil all over the roast. Then, sprinkle the seasoning mix. Rub it in well.

Sear the Roast

  • Heat a large skillet. Add a little olive oil. Sear the roast. Brown it on all sides. This locks in flavor.

Roast in the Oven

  • Place the seared roast. Put it in a roasting pan. Pour beef broth into the pan. Roast at 300°F (150°C). Cook for 1.5 to 2 hours. Use a meat thermometer. Cook until it reaches 130°F (54°C). This is for medium-rare. Adjust for your liking.

Let it Rest

  • Remove the roast. Place it on a cutting board. Cover it loosely with foil. Let it rest for 15-20 minutes. This keeps juices in.

Slice the Beef

  • Slice the roast very thin. Use a sharp knife. Slice against the grain. This makes it tender.

Make the Horseradish Sauce

  • In a small bowl, mix. Combine mayonnaise and horseradish. Stir until smooth.

Assemble Sandwiches

  • Slice the buns in half. Spread horseradish sauce. Add a generous amount of sliced beef. Top with cheddar cheese. If you like cheese.

Serve and Enjoy

  • Serve the sandwiches warm. Add pickles on the side. Enjoy your Pioneer Woman Roast Beef Sandwiches!

Notes

  • Thin Slices are Key: Always slice thinly. This makes the meat tender.
  • Don't Overcook: Use a thermometer. Medium-rare is best.
  • Resting is Important: Don't skip resting time. Juices redistribute.
  • Get Good Buns: Fresh, soft buns make a difference.
  • Experiment with Cheese: Try provolone or Swiss.
  • Make it Ahead: You can cook the roast early. Slice it when ready.
