Ingredients
  

  • 7 pounds pork shoulder Boston Butt.
  • 2 whole white onions.
  • 1 tablespoon salt.
  • 1 tablespoon black pepper.
  • 1 can 11 ounces chipotle peppers in adobo.
  • 2 cans Dr. Pepper soda.
  • 4 tablespoons brown sugar.
  • 1/2 cup water if needed.

Instructions
 

Prep the Oven

  • Heat your oven to 300 degrees. This low heat cooks the meat slowly.

Cut the Onions

  • Peel the white onions. Cut them into thick wedges. Place them at the bottom of the pot.

Season the Pork

  • Rub salt and pepper on the pork. Place it on top of the onions.

Add the Spicy Kick

  • Pour the chipotle peppers over the meat. Use the whole can for heat.

Pour the Soda

  • Pour both cans of Dr. Pepper over everything. Add the brown sugar on top.

The Long Cook

  • Put the lid on the pot. Bake for about six to seven hours.

Check the Meat

  • The meat should fall apart with a fork. It should be very tender.

Shred the Pork

  • Take the pork out of the pot. Use two forks to shred it.

Mix with Juices

  • Put the shredded meat back in the pot. Toss it with the remaining juices.

Serve it Up

  • Place the meat on toasted buns. Add your favorite BBQ sauce if desired.

  • Always use a bone-in pork shoulder.
  • The bone adds a lot of extra flavor.
  • Do not use diet soda for this.
  • The real sugar helps create a thick sauce.
  • If you hate spice, use fewer chipotle peppers.
  • They are very hot and smoky.
  • Let the meat rest before you shred it.
  • This keeps the juices inside the pork.
  • You can make this a day early.
  • It tastes even better the next day.
  • Fat is good for flavor during cooking.
  • Do not trim all the fat off.
