Ingredients

  • 1 cup of creamy peanut butter for the base.
  • 1/4 cup of unsalted butter softened very well.
  • 2 cups of powdered sugar for the thick structure.
  • 1 teaspoon of pure vanilla extract for flavor.
  • 2 cups of semi-sweet chocolate chips for dipping.
  • 1 tablespoon of coconut oil for a shiny shell.
  • 1/4 teaspoon of kosher salt to balance the sweet.
  • Yellow sprinkles for a bright decoration today.

Instructions

Mix the Nutty Dough

  • Combine the peanut butter, butter, and vanilla in a large bowl. Beat until the mixture is very smooth.

Add the Sweet Sugar

  • Slowly add the powdered sugar and salt to the bowl. Mix until a thick dough forms that you can touch.

Shape the Small Eggs

  • Scoop a tablespoon of dough and roll it into a ball. Flatten it into an egg shape with your hands now.

Chill the Peanut Centers

  • Place the shaped eggs onto your lined baking sheet. Put them in the freezer for 30 minutes today.

Melt the Dark Chocolate

  • Place the chocolate chips and coconut oil in a bowl. Microwave for 30 seconds until the liquid is very smooth.

Dip the Cold Eggs

  • Use a fork to drop one egg into the warm chocolate. Lift it out and let the extra liquid drip off slowly.

Place on the Paper

  • Set the chocolate egg back onto the parchment paper. Add your yellow sprinkles while the shell is still wet.

Set in the Fridge

  • Chill the finished eggs for one hour in the fridge. This makes the chocolate very hard and snappy today.

Notes

  • Use a smooth peanut butter for the best texture today.
  • Always freeze the centers before you start the dipping.
  • Use coconut oil to make the chocolate very shiny.
  • Sift the powdered sugar to avoid any white lumps.
  • Use a deep bowl for the chocolate to cover the eggs.
  • Add extra salt if you love a very savory candy.
  • Keep the eggs cold until you are ready to eat them.
