Ingredients
  

  • 1 pound dried red kidney beans
  • 1 pound andouille sausage sliced
  • 1 large yellow onion diced
  • 1 bell pepper chopped
  • 3 celery stalks diced
  • 4 garlic cloves minced
  • 2 bay leaves
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • Green onions for garnish

Instructions
 

  • Soak beans overnight in cold water.
  • Drain and rinse soaked beans thoroughly.
  • Add beans to large pot with water.
  • Bring water to rolling boil quickly.
  • Reduce heat and simmer for one hour.
  • Sauté sausage until golden brown and crispy.
  • Add onions, peppers, and celery to pot.
  • Cook vegetables until soft and translucent.
  • Add garlic and spices to mixture.
  • Combine sausage with cooked bean mixture.
  • Simmer everything together for thirty minutes.
  • Cook rice separately in chicken broth.
  • Serve beans over fluffy white rice.
