Ingredients

  • 1 pound of boneless chicken breast cut into cubes.
  • 1/2 cup of cornstarch for a very light crunch.
  • 1/4 cup of all-purpose flour for the batter base.
  • 1 large egg white beaten until very frothy.
  • 1/4 cup of cold water for a thin coating today.
  • 1/3 cup of honey for the natural sweetness.
  • 2 tablespoons of soy sauce for a salty color.
  • 1 tablespoon of lemon juice for the tart zing.
  • 1 teaspoon of toasted sesame oil for a nutty smell.
  • 1/2 cup of fresh yellow bell pepper sliced thin.
  • 1/2 cup of thin green beans trimmed and cut.
  • 1 tablespoon of toasted sesame seeds for garnish.
  • 2 cups of vegetable oil for the deep frying.

Instructions

Make the Light Batter

  • In a medium bowl, whisk the starch, flour, and egg white. Add the cold water and stir until it is very smooth.

Coat the Chicken Cubes

  • Drop the chicken pieces into the white batter. Make sure every piece of meat is fully covered before frying today.

Heat the Cooking Oil

  • Pour the vegetable oil into your wok over a high heat. Wait until the liquid is shimmering and very hot now.

Fry Until Very Golden

  • Add the chicken to the oil in small batches. Cook for five minutes until the crust is very hard and crunchy.

Whisk the Honey Sauce

  • In a small pot, mix the honey, soy, and lemon juice. Add the sesame oil and simmer until it is very thick.

Sauté the Fresh Vegetables

  • In a separate pan, cook the peppers and green beans for three minutes. They should be tender but still very bright.

Toss in the Sticky Glaze

  • Add the fried chicken and vegetables into the honey sauce. Stir quickly so the glaze coats the meat very well.

Garnish and Serve Hot

  • Sprinkle the toasted sesame seeds over the top. Serve the chicken with white rice while it is still very warm today.

Notes

  • Use cold water in the batter for a much crispier skin.
  • Fry the chicken in small batches so the oil stays hot today.
  • Use fresh lemon juice instead of the bottled version.
  • Pat the chicken dry before you put it in the batter.
  • Toast your own sesame seeds for a much stronger smell.
  • Add extra honey if you love a very sweet glaze.
  • Sauté the vegetables quickly so they stay very snappy.
