Ingredients

  • 1 bone-in prime rib roast 6-8 pounds
  • 4 tablespoons of softened butter
  • 6 cloves of fresh garlic minced
  • 2 tablespoons of fresh rosemary chopped
  • 2 tablespoons of fresh thyme chopped
  • 2 tablespoons of kosher salt
  • 1 tablespoon of black pepper
  • 1 tablespoon of olive oil
  • 2 cups of beef broth

Instructions

  • Take the roast out of the refrigerator early.
  • Let it sit for two hours at room temperature.
  • Pat the meat completely dry with paper towels.
  • This helps create that beautiful golden crust.
  • Mix softened butter with minced garlic in a bowl.
  • Add chopped rosemary and thyme to the mixture.
  • Stir in salt and pepper until well combined.
  • This butter adds amazing flavor to the meat.
  • Rub olive oil all over the prime rib.
  • Spread the herb butter mixture on every surface.
  • Press it into the meat really well.
  • Don't forget the sides and ends too.
  • Preheat your oven to 450°F first.
  • Place the roast on a rack bone-side down.
  • Put it in the hot oven immediately.
  • Roast for exactly 20 minutes at high heat.
  • Reduce the oven temperature to 325°F now.
  • Pour beef broth into the bottom of the pan.
  • Continue cooking until the internal temperature reaches 120°F.
  • This takes about 2-3 hours total time.
  • Remove the roast when the thermometer reads right.
  • Cover it loosely with aluminum foil sheets.
  • Let it rest for 30 minutes minimum.
  • The temperature will rise to perfect medium-rare.

Notes

  • Always use a meat thermometer for perfect results.
  • Room temperature meat cooks more evenly throughout.
  • The high heat start creates that crispy crust.
  • Resting time is not optional at all.
  • It keeps all the juices inside the meat.
  • Ask your butcher to trim excess fat beforehand.
  • Save the bones for making delicious beef stock.
  • Let guests choose their preferred doneness when slicing.
