Ingredients
  

  • 225 g softened butter
  • 225 g caster sugar
  • 4 large eggs
  • 225 g self-raising flour
  • 1 teaspoon baking powder
  • 200 g white chocolate melted
  • 300 g fresh raspberries
  • 300 ml double cream
  • 2 tablespoons icing sugar
  • Extra raspberries for decoration

Instructions
 

  • Preheat your oven to 180°C (160°C fan).
  • Grease both cake tins with butter generously.
  • Line the bottoms with baking parchment paper.
  • This prevents sticking and ensures easy removal.
  • Beat butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well.
  • Fold in flour and baking powder gently.
  • Add half the melted white chocolate to mixture.
  • Don't overmix or cake will be dense.
  • Divide batter equally between both prepared tins.
  • Smooth the tops with your spatula carefully.
  • Bake for 25 to 30 minutes exactly.
  • Test with a skewer; it should come clean.
  • Let cakes cool in tins for 10 minutes.
  • Transfer to wire rack to cool completely.
  • Whip double cream with icing sugar until stiff.
  • Fold in remaining melted white chocolate gently.
  • Crush half the raspberries with a fork.
  • Mix crushed berries into the cream mixture.
  • Place first cake layer on serving plate.
  • Spread cream filling evenly over the top.
  • Add whole raspberries over the cream layer.
  • Place second cake on top very carefully.
  • Decorate with remaining raspberries and white chocolate.
