Set your oven to 220°C (200°C fan).
Grease two baking trays lightly.
This helps scones not stick.
Put flour in a large bowl.
Add baking powder.
Mix them together well.
Add cold butter cubes to flour.
Use your fingertips to rub it in.
Keep going until it looks like breadcrumbs.
Work quickly to keep butter cold.
Stir in the caster sugar.
Mix it evenly through the mixture.
Crack eggs into a measuring jug.
Add milk until you reach 225ml total.
Save 2 tablespoons for glazing later.
Pour egg mix into the flour bowl.
Use a knife to mix gently.
Stop when dough comes together.
Do not overmix it.
Put dough on a floured surface.
Pat it to 2cm thick. Do not roll too thin.
Dip cutter in flour first.
Press straight down into dough.
Do not twist the cutter.
This helps scones rise tall.
Place scones on baking trays.
Brush tops with saved egg mix.
Bake for 10-15 minutes.
They should turn golden brown.
Put scones on a wire rack.
Cover with a tea towel.
Serve warm with jam and cream.
