Instructions

  • This makes them plump and juicy.
  • If you prefer, use orange juice instead.
  • Cover the bowl with plastic wrap.
  • Let it sit in a cool place.
  • Preheat your oven to 150°C.
  • Beat butter and sugar until fluffy.
  • Add eggs one at a time slowly.
  • Mix in flour and spice gently.
  • Fold in the soaked fruits carefully.
  • Add orange zest for extra flavor.
  • Grease your mini cake tins well.
  • Line them with greaseproof paper carefully.
  • Fill each tin three-quarters full only.
  • Bake for 45 to 50 minutes.
  • Check with a skewer for doneness.
  • Let cakes cool completely before decorating.
  • Brush each cake with warm jam.
  • Roll out marzipan quite thinly now.
  • Cover each cake with marzipan layers.
  • Then roll out white fondant icing.
  • Cover the marzipan with fondant smoothly.
