Preheat your oven to 150°C (300°F).
Line your tin with baking parchment.
Grease it lightly with extra butter.
This prevents sticking during baking time.
Beat butter and sugar until fluffy.
This takes about 5 minutes roughly.
Add eggs one at a time carefully.
Beat well after each egg addition.
The mixture should look smooth now.
Fold in the sifted flour gently.
Add mixed spice to the mixture.
Don't overmix at this stage please.
Stir until just combined together nicely.
Fold in the mincemeat jar contents.
Add dried fruits and cherries now.
Mix in almonds and brandy too.
Combine everything gently but thoroughly.
Pour batter into prepared tin evenly.
Smooth the top with a spoon.
Bake for 2 hours approximately.
Cover with foil after 1 hour.
Check with a skewer for doneness.
Let it cool in tin completely.
Transfer to a wire rack afterward.
Wrap in parchment when totally cool.
Store in an airtight container safely.
