Ingredients
  

  • 2  Garlic cloves (minced)
  • 4 large Onions (thinly sliced)
  • 1  Bay leaf
  • 2 sprigs Thyme (fresh)
  • 6 cups Beef broth
  • 2 cups  Gruyere cheese (shredded)
  • 1/4 cup Sherry dry
  • 2 tbsp Olive oil
  • 1 tsp Sugar
  • 2 tbsp Unsalted butter
  • Baguette slices
  • Pepper (to your liking)
  • Salt (to your liking) 

Instructions
 

  • In a large pot melt butter and olive oil.
  • Add sliced onions. Cook until soft and brown.
  • Stir in garlic and sugar. Cook for 5 minutes.
  • Add dry sherry. Scrape up browned bits.
  • Pour in beef broth. Add thyme and bay leaf.
  • Simmer for 20-30 minutes. Season with salt and pepper.
  • Preheat the broiler.
  • Toast baguette slices until golden.
  • Ladle soup into oven-safe bowls.
  • Top with baguette slices and Gruyere cheese.
  • Broil for 2-3 minutes until cheese bubbles and browns.
  • Serve hot and enjoy!
