- 2Â Garlic cloves (minced)
- 4 large Onions (thinly sliced)
- 1Â Bay leaf
- 2 sprigs Thyme (fresh)
- 6 cups Beef broth
- 2 cups Gruyere cheese (shredded)
- 1/4 cup Sherry dry
- 2 tbsp Olive oil
- 1 tsp Sugar
- 2 tbsp Unsalted butter
- Baguette slices
- Pepper (to your liking)
- Salt (to your liking)Â
In a large pot melt butter and olive oil.
Add sliced onions. Cook until soft and brown.
Stir in garlic and sugar. Cook for 5 minutes.
Add dry sherry. Scrape up browned bits.
Pour in beef broth. Add thyme and bay leaf.
Simmer for 20-30 minutes. Season with salt and pepper.
Preheat the broiler.
Toast baguette slices until golden.
Ladle soup into oven-safe bowls.
Top with baguette slices and Gruyere cheese.
Broil for 2-3 minutes until cheese bubbles and browns.
Serve hot and enjoy!
