Ingredients

  • For the Graham Cracker Crust:
  • 1 1/2 cups of graham cracker crumbs about 10–12 full sheets.
  • 1/4 cup of granulated sugar.
  • 6 tablespoons of unsalted butter melted.
  • A pinch of salt.
  • For the Key Lime Filling:
  • 2 cans 14 ounces each of sweetened condensed milk.
  • 1 cup of Key lime juice freshly squeezed or high-quality bottled.
  • 2 tablespoons of Key lime zest.
  • 4 large egg yolks at room temperature.
  • For Garnish: Whipped cream and extra lime slices.

Instructions

Prep the Oven

  • Preheat your oven to 175°C. Line your square baking pan with parchment paper, leaving an overhang on two sides to act as a "sling."

Make the Crust

  • In a bowl, mix the graham cracker crumbs, sugar, salt, and melted butter. Press the mixture firmly into the bottom of the pan to create an even layer.

Pre-Bake the Base

  • Bake the crust for 8 to 10 minutes until it is fragrant and lightly golden. Remove it from the oven and let it cool slightly while you make the filling.

Whisk the Yolks

  • In your large bowl, beat the egg yolks and Key lime zest at medium speed for about 3 minutes until the mixture is thick and pale yellow.

Add the Milk

  • Pour in the sweetened condensed milk and continue to whisk for another 2 minutes. This adds air and structure to the bars.

Add the Citrus

  • Slowly whisk in the Key lime juice until the mixture is smooth. The acid in the lime juice will begin to thicken the condensed milk immediately.

The Final Bake

  • Pour the filling over the pre-baked crust. Bake for 15 to 18 minutes. The edges should be set, but the center should still have a slight "jiggle."

Chill and Slice

  • Let the bars cool to room temperature, then refrigerate for at least 4 hours (or overnight). Use the parchment sling to lift the bars out and slice into squares.

Notes

  • Use Key Limes. If you can find them, genuine Key limes are smaller and more tart than regular Persian limes, providing a much more authentic "island" flavor.
  • Zest first. Always zest your limes before juicing them. The aromatic oils in the skin are the secret to that intense, professional citrus fragrance.
  • Don't over-bake. If the top starts to brown, you have cooked them too long. The bars should be pale and creamy for the best "melt-in-your-mouth" texture.
  • The "Yolk" secret. Beating the egg yolks thoroughly before adding the other ingredients creates a lighter, fluffier custard that isn't too dense.
  • The Parchment Sling. Never skip the parchment paper; these bars are sticky, and the sling allows you to get clean, professional squares without ruining the crust.
  • Cold slicing. For the cleanest edges, wipe your knife with a warm, damp cloth between every single cut. This prevents the filling from sticking to the blade.
