Ingredients
  

  • 4 beef tenderloin steaks 6 ounces each

  • 3 tablespoons shallots finely chopped
  • 8 ounces mushrooms sliced thin
  • 2 tablespoons Dijon mustard
  • 1 cup heavy cream
  • 1/4 cup brandy or cognac
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Pound steaks to half-inch thickness using the mallet.
  • Season both sides with salt and pepper generously.
  • Let them sit at room temperature briefly.
  • This helps them cook evenly throughout.
  • Heat butter and oil in your skillet.
  • Cook steaks for 3 minutes per side.
  • They should be medium-rare and juicy inside.
  • Remove steaks and keep them warm nearby.
  • Add shallots to the same hot pan.
  • Cook them for about one minute only.
  • Add mushrooms and cook until they're golden brown.
  • This takes around 4 minutes of cooking.
  • Pour in the brandy very carefully now.
  • Let it cook for 30 seconds quickly.
  • Add Worcestershire sauce and Dijon mustard next.
  • Stir everything together until it's well mixed.
  • Pour the heavy cream into your pan.
  • Let it simmer and thicken for 3 minutes.
  • Stir occasionally to prevent any burning issues.
  • Taste and adjust your salt and pepper.
  • Return the steaks to your creamy sauce.
  • Spoon sauce over the top generously too.
  • Cook for just one more minute together.
