Fill your saucepan with six cups of water.
Add the vinegar and salt to the water.
Place it on the stove over medium heat.
Bring the water to a gentle simmer.
You want small bubbles, not big rolling ones.
The vinegar helps the egg whites set faster.
Crack each egg into a small bowl first.
This prevents shells from getting into your water.
It also makes pouring much easier and safer.
Check for any broken yolks before cooking.
Stir the water gently with your slotted spoon.
This creates a small, slow whirlpool in the center.
The movement helps wrap the whites around the yolk.
Slide the egg into the center of the whirlpool.
Do this close to the water surface.
The egg white will wrap around the yolk.
Let it cook undisturbed for three to four minutes.
Use your slotted spoon to lift the egg out.
Touch it gently to check the firmness.
The white should feel set but not hard.
Place it on paper towels to drain excess water.
Poached eggs taste best when they're freshly made.
Serve them right away on toast or salad.
Season with salt and pepper to taste.
