Ingredients
  

  • 1 6- pound leg of lamb bone-in.
  • 3 cloves of fresh garlic sliced.
  • 2 tablespoons of olive oil.
  • 1 tablespoon of dried rosemary.
  • 1 teaspoon of salt.
  • 1/2 teaspoon of black pepper.
  • 1/2 cup of dry white wine.

Instructions
 

Prepare the Meat

  • Trim any extra fat off the lamb. Do not remove all of it. Fat adds flavor.

Add Garlic Studs

  • Poke small holes in the meat with a knife. Push garlic slices deep into these holes.

Make the Rub

  • Mix oil, rosemary, salt, and pepper in a bowl. Rub this mix all over the lamb.

Roast the Lamb

  • Place the meat on the roasting rack. Put it in a 325°F oven.

Check the Temperature

  • Use a meat thermometer to check for doneness. Aim for 135°F for a medium-rare roast.

Rest the Meat

  • Take the lamb out of the oven. Let it rest for 20 minutes before slicing.
