Ingredients
  

  • 5 to 6 large yellow onions thin slices
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 3 tablespoons all-purpose flour
  • 2 quarts beef stock
  • 1/2 cup dry white wine or dry vermouth
  • Salt and pepper to taste
  • 1 baguette cut and toasted
  • 2 cups grated Gruyère cheese

Instructions
 

  • Put butter and oil in a large pot.
  • Add sliced onions and some salt.
  • Cook on low heat for 30 minutes. Stir often.
  • Add sugar. Cook until onions are golden brown.
  • Add flour. Stir for 3 minutes.
  • Pour in hot beef stock. Stir well.
  • Add wine. Let it simmer for 30 minutes.
  • Add more salt and pepper if needed.
  • Put soup in oven-safe bowls.
  • Add toasted bread and cheese on top.
  • Put bowls on a baking sheet.
  • Broil until cheese melts and turns golden.
