Ingredients
  

  • 6 ounces bittersweet chocolate good quality is key
  • 1/2 cup strong brewed coffee or water
  • 6 large eggs separated
  • 1/4 cup granulated sugar
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream

Instructions
 

Melt the Chocolate

  • Break chocolate into small pieces. Put chocolate in a bowl. Add coffee (or water). Set bowl over simmering water. Do not let water touch bowl. Stir until chocolate is melted and smooth. Remove from heat.

Prepare Egg Yolks

  • In another bowl, whisk egg yolks. Add half of the sugar. Whisk until light and creamy. Stir in vanilla extract.

Combine Chocolate and Yolks

  • Pour melted chocolate into egg yolk mixture. Mix well with spatula. It should be smooth.

Beat Egg Whites

  • In a clean bowl, beat egg whites. Use an electric mixer if you have one. Add salt. Beat until soft peaks form. Gradually add remaining sugar. Beat until stiff, glossy peaks form. Do not overbeat.

Fold in Egg Whites

  • Gently fold one-third of egg whites into chocolate mixture. Be careful not to deflate. Then fold in remaining egg whites. Do this in two additions. Keep it light and airy.

Whip Cream

  • In a separate bowl, whip heavy cream. Beat until soft peaks form.

Fold in Whipped Cream

  • Gently fold whipped cream into the mousse. Mix until just combined. Again, be gentle.

Chill the Mousse

  • Pour mousse into serving dishes. Or use one large bowl. Chill for at least 3 hours. Overnight is even better. This allows it to set.

Serve and Enjoy!

Notes

  • Use high-quality chocolate. It makes a big difference.
  • Make sure bowls are very clean. Especially for egg whites.

  • You can use decaf coffee. Or just water.
  • Add a splash of liqueur. Like Grand Marnier.
