Ingredients
  

  • One 14-pound fresh whole turkey.
  • 1/2 cup of unsalted butter.
  • 1/2 cup of dry white wine.
  • 2 tablespoons of salt.
  • 1 tablespoon of black pepper.
  • 1 sliced onion and two carrots.
  • Fresh herbs like thyme and rosemary.

Instructions
 

Prep the Bird

  • Clean the turkey and pat it very dry. Season the inside with salt and pepper.

Prepare the Liquid

  • Melt butter and wine in a small pan. This mixture keeps the turkey very moist.

Soak the Cloth

  • Dip the cheesecloth into the butter and wine. Make sure it is fully wet.

Drape the Turkey

  • Lay the wet cloth over the turkey breast. It should cover the legs too.

Roast the Turkey

  • Put the bird in a 325 degree oven. Pour extra liquid over the cloth hourly.

Remove the Cloth
