Equipment

  • Large Mixing Bowl
  • Handheld electric mixer.
  • Whisk
  • Rubber spatula
  • 9x13-inch baking dish
  • Small shallow bowl.
  • Fine mesh strainer

Ingredients

  • 6 large egg yolks.
  • 3/4 cup granulated sugar.
  • 2/3 cup whole milk.
  • 1 pound mascarpone cheese.
  • 1 teaspoon vanilla extract.
  • 1 1/2 cups heavy cream.
  • 2 cups strong brewed coffee.
  • 2 tablespoons cocoa powder.
  • 24 Italian ladyfinger cookies.

Instructions

  • Whisk egg yolks and sugar in a saucepan. Add milk and cook on medium heat. Stir until the mixture boils and thickens.
  • Let the custard cool down slightly. Fold in the mascarpone and vanilla extract. Use a spatula to keep it smooth.
  • In a separate bowl, whip the heavy cream. Beat until you see stiff peaks form. Gently fold this into the custard mix.
  • Dip ladyfingers quickly into the cold coffee. Do not let them get too soggy. Place them in the baking dish.
  • Spread half the cream over the cookies. Add another layer of soaked ladyfingers. Top with the remaining cream.
  • Refrigerate the dish for at least six hours. Dust with cocoa powder before serving. Enjoy your cold, creamy treat.

Notes

  • Use high-quality espresso for a deeper flavor.
  • Make sure the mascarpone is at room temperature.
  • Cold cheese can leave small lumps in cream.
  • Do not soak cookies for more than two seconds.
  • Soggy cookies will ruin the dessert texture.
  • Chilling the dish overnight is always best.
  • This helps the flavors blend together perfectly.
