Ingredients
  

  • 3 to 4 pounds beef chuck roast.
  • 2 tablespoons olive oil.
  • 1 tablespoon salt.
  • 1 teaspoon black pepper.
  • 1 yellow onion cut into wedges.
  • 4 cloves garlic minced.
  • 1 pound carrots peeled and chopped.
  • 1 pound potatoes cut into chunks.

  • 3 sprigs fresh thyme.

Instructions
 

  • Season the beef well with salt and pepper.
