Ingredients
  

  • 4 cups all-purpose flour.
  • 2 tablespoons baking powder.
  • 1 teaspoon baking soda.
  • 1/2 teaspoon salt.
  • 12 tablespoons cold salted butter.
  • 1 large egg beaten.
  • 1 1/2 cups cold buttermilk.
  • 1 pound fresh strawberries sliced.
  • 1/4 cup granulated sugar.
  • 2 cups heavy whipping cream.

Instructions
 

  • Slice your berries into a bowl. Add a little sugar. Let them sit to get juicy.
  • Whisk flour, baking powder, and soda. Add the salt to the bowl. Mix it well.
  • Add cold butter cubes to flour. Use a pastry cutter. Make it look like crumbs.
  • Stir in the buttermilk and egg. Do not overmix the dough. Keep it light.
  • Drop dough onto a baking sheet. Bake at 400°F until golden brown. Let them cool.
  • Beat heavy cream and sugar. Make it thick and fluffy. Set it aside.
  • Split a warm biscuit in half. Add berries and whipped cream. Top with the other half.

Notes

  • Use very cold butter for flaky layers.
  • Don't overwork the dough at all.
  • Use fresh, ripe strawberries for better flavor.
  • Serve the biscuits while they are warm.
