Ingredients
  

  • 4 large ripe tomatoes diced small
  • 1 medium white onion finely chopped
  • 2 jalapeño peppers seeds removed, minced
  • 1/2 cup fresh cilantro chopped
  • 3 cloves garlic minced fine
  • Juice from 2 fresh limes
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Wash tomatoes under cold water first.
  • Dice them into small pieces.
  • Remove extra seeds if you want.
  • Put them in your mixing bowl.
  • Peel and dice the white onion.
  • Make pieces very small and even.
  • Add them to the tomatoes.
  • Cut jalapeños in half carefully.
  • Remove all the seeds inside.
  • Mince them into tiny pieces.
  • Add to the bowl.
  • Wash cilantro and pat it dry.
  • Chop it roughly but small.
  • Mince the garlic cloves finely.
  • Add both to your mixture.
  • Squeeze fresh lime juice over everything.
  • Add salt and black pepper now.
  • Stir gently until well combined.
  • Taste and adjust seasoning if needed.
  • Cover bowl with plastic wrap.
  • Refrigerate for 30 minutes minimum.
  • This helps flavors blend together perfectly.

  • Use ripe, fresh tomatoes for sweetness.
  • Roma tomatoes work wonderfully here.
  • Adjust jalapeños for your spice preference.
  • Want it milder? Use just one pepper.
  • Fresh lime juice is absolutely essential.
  • Don't use bottled lime juice ever.
