- 3 to 4 lbs Chuck roast.
- 2 tbsp Vegetable oil.
- 1 large Yellow onion sliced.
- 4 cloves Garlic minced.
- 1 lb Carrots peeled and cut.
- 1 lb Potatoes cubed.
- 2 cups Beef broth.
- 1 cup Red wine optional.
- 2 sprigs Fresh rosemary.
- 3 sprigs Fresh thyme.
- Salt and black pepper to taste.
Pat the beef dry with paper towels. Rub salt and pepper on all sides.
Heat oil in your Dutch oven. Brown the meat on every side. Remove it and set it aside.
Add onions to the same pot. Cook until they are soft and brown. Add the garlic for one minute.
Pour in the broth and wine. Scrape the brown bits from the bottom. This adds so much flavor.
Put the meat back into the pot. Add your fresh herbs on top. Cover the pot with a lid.
Place the pot in the oven. Bake at 325°F for two hours.
Add the carrots and potatoes now. Cook for one more hour. The meat should be very tender.
