Equipment

  • Large Dutch oven or heavy pot
  • Sharp kitchen knife
  • Cutting Board
  • Tongs for turning meat.
  • Measuring cups and spoons

Ingredients
  

  • 3 to 4 lbs Chuck roast.
  • 2 tbsp Vegetable oil.
  • 1 large Yellow onion sliced.
  • 4 cloves Garlic minced.
  • 1 lb Carrots peeled and cut.
  • 1 lb Potatoes cubed.
  • 2 cups Beef broth.
  • 1 cup Red wine optional.
  • 2 sprigs Fresh rosemary.
  • 3 sprigs Fresh thyme.
  • Salt and black pepper to taste.

Instructions
 

  • Pat the beef dry with paper towels. Rub salt and pepper on all sides.
  • Heat oil in your Dutch oven. Brown the meat on every side. Remove it and set it aside.
  • Add onions to the same pot. Cook until they are soft and brown. Add the garlic for one minute.
  • Pour in the broth and wine. Scrape the brown bits from the bottom. This adds so much flavor.
  • Put the meat back into the pot. Add your fresh herbs on top. Cover the pot with a lid.
  • Place the pot in the oven. Bake at 325°F for two hours.
  • Add the carrots and potatoes now. Cook for one more hour. The meat should be very tender.

Notes

  • Do not skip searing the meat.
  • Use a heavy pot for even heat.
  • Fresh herbs taste better than dried ones.
  • Let the meat rest before serving it.
  • The sauce makes a great gravy.
