Ingredients
  

  • 2 cups all-purpose flour.
  • 2 tablespoons granulated sugar.
  • 2 teaspoons baking powder.
  • 1 teaspoon baking soda.
  • 1/2 teaspoon salt.
  • 2 large eggs.
  • 1 1/2 cups buttermilk.
  • 4 tablespoons melted butter.
  • 1 cup chopped pecans.
  • 1 teaspoon vanilla extract.

Instructions
 

  • Place chopped pecans in a dry pan. Heat them over medium heat for three minutes. Stir often so they do not burn. Set aside.
  • Whisk flour, sugar, and baking powder together. Add the baking soda and salt. Ensure there are no large lumps.
  • In another bowl, beat the eggs. Stir in buttermilk, melted butter, and vanilla. Mix until the liquid is smooth.
  • Pour wet ingredients into the flour mixture. Stir gently with a spoon. Do not overmix the batter. Fold in half of the pecans.
  • Heat your griddle to medium heat. Pour 1/4 cup of batter for each pancake. Sprinkle extra pecans on top of the wet batter.
  • Wait for bubbles to form on top. Flip the pancake with a spatula. Cook until the bottom is golden brown.
