Ingredients
  

  • 2 cups granulated sugar.
  • 1 cup light corn syrup.
  • 1/2 cup water.
  • 1/4 cup unsalted butter.
  • 2 cups roasted salted peanuts.
  • 1 1/2 teaspoons baking soda.
  • 1 teaspoon vanilla extract.

Instructions
 

  • Line a large baking sheet. Use parchment paper or a mat.
  • Mix sugar, syrup, and water in the pan. Stir it over medium heat.
  • Boil the mix until it reaches 250 degrees. Use your candy thermometer.
  • Stir in the peanuts and butter. Keep cooking the mixture.
  • Wait until the heat hits 300 degrees. This makes it very crunchy.
  • Remove from heat. Quickly stir in soda and vanilla. It will bubble up.
  • Pour it onto the sheet. Spread it thin and let it cool.

  • Use a thermometer for accuracy.
  • Move fast once you add baking soda.
  • Do not stir too much at the end.
  • Work on a dry, clear day.
  • Break it into pieces when fully hard.
