Ingredients
  

  • 1 cup salted butter softened.
  • 1 cup dark brown sugar.
  • 1/2 cup granulated sugar.
  • 2 large eggs.
  • 1 teaspoon vanilla extract.
  • 2 cups all-purpose flour.
  • 1 teaspoon baking soda.
  • 1/2 teaspoon salt.
  • 1 teaspoon ground cinnamon.
  • 3 cups quick-cooking oats.
  • 1/2 cup butter.
  • 2 cups powdered sugar.
  • 1 tablespoon milk.

Instructions
 

  • Heat your oven to 350°F. Line pans with parchment paper.
  • Beat butter and sugars until very fluffy. Use a high speed.
  • Mix in the eggs and vanilla extract. Beat until smooth.
  • Whisk flour, soda, salt, and cinnamon together. Add to butter.
  • Stir in the oats using a large spoon. Mix well.
  • Drop rounded scoops onto the pans. Bake for 10 minutes.
  • Beat filling ingredients until light and airy. Set aside.
  • Spread filling on one flat cookie side. Top with another.

Notes

  • Use dark brown sugar for extra chewiness.
  • Do not overbake the cookies.
  • Let cookies cool fully before adding cream.
  • Use room temperature eggs for better mixing.
  • Sift the powdered sugar for a smooth filling.
