Ingredients
  

  • 1 cup salted butter softened
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats

Instructions
 

  • Preheat your oven to 350°F. Line your pans with parchment paper.
  • Mix butter and both sugars. Use a mixer until it is fluffy.
  • Beat in the eggs one by one. Add the vanilla extract now.
  • Whisk flour, cinnamon, baking soda, and salt together. Slowly add this to the wet mix.
  • Stir in the rolled oats by hand. Ensure the oats are evenly spread.
  • Drop spoonfuls of dough onto the pans. Bake for 10 to 12 minutes.

Notes

  • Use room temperature eggs for better mixing.
  • Do not overbake the cookies.
  • Let them cool on the pan for 5 minutes.
  • Use old-fashioned oats for a chewy texture.
