Ingredients
  

  • 8 cups fresh kale chopped
  • 10 slices thick-cut bacon diced
  • 1 cup heavy cream
  • 4 large eggs
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Heat your oven to 375 degrees. Grease your large baking dish well.
  • Fry bacon in a skillet until very crispy. Remove bacon but keep the fat.
  • Add onions to the bacon fat. Cook until soft. Add garlic and kale. Stir until kale wilts down.
  • Whisk eggs and heavy cream in a bowl. Add salt, pepper, and half the cheese.
  • Put kale and bacon into the baking dish. Pour the egg mixture over the top.
  • Sprinkle the remaining cheese on top. Bake for 30 minutes until golden brown.
