Ingredients
  

  • 5 lbs Russet potatoes peeled and sliced.
  • 2 cups heavy cream.
  • 2 cups shredded Gruyere cheese.
  • 1 cup grated Parmesan cheese.
  • 4 tablespoons unsalted butter.
  • 2 cloves minced garlic.
  • 1 teaspoon salt.
  • 1/2 teaspoon black pepper.
  • Fresh thyme for garnish.

Instructions
 

  • Heat your oven to 375°F. Grease your baking dish with butter.
  • Slice potatoes into thin rounds. Use a mandoline for even slices.
  • Melt butter in a saucepan. Add garlic and cook for one minute. Stir in the heavy cream.
  • Place a layer of potatoes in the dish. Sprinkle salt, pepper, and some Gruyere cheese.
  • Continue layering potatoes and cheese. Pour the cream mixture over everything.
  • Cover the dish with foil. Bake for 45 minutes. Remove foil and bake 20 more minutes.
