Ingredients
  

  • 2 large yellow onions diced
  • 4 tablespoons unsalted butter
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 16 ounces sour cream
  • 1/2 cup mayonnaise
  • 1/4 teaspoon garlic powder
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Melt the butter in your skillet. Use medium heat. Add the diced onions.
  • Cook onions for 20 minutes. Stir them often. They should be brown and soft.
  • Add salt and pepper to the onions. Let them cool down completely.
  • In a bowl, combine sour cream and mayo. Add the garlic powder. Stir well.
  • Fold the cooled onions into the cream. Add the fresh parsley now.
  • Put the dip in the fridge. Wait for one hour. Serve with chips.

Notes

  • Be patient with the onions. Low heat is best.
  • Always use full-fat sour cream. It tastes much richer.
  • Let the onions cool. Hot onions melt the cream.
  • Make it a day early. The flavor gets better.
  • Use thick potato chips. They hold the dip well.
