- 2 large yellow onions diced
- 4 tablespoons unsalted butter
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 16 ounces sour cream
- 1/2 cup mayonnaise
- 1/4 teaspoon garlic powder
- 1 tablespoon fresh parsley chopped
Melt the butter in your skillet. Use medium heat. Add the diced onions.
Cook onions for 20 minutes. Stir them often. They should be brown and soft.
Add salt and pepper to the onions. Let them cool down completely.
In a bowl, combine sour cream and mayo. Add the garlic powder. Stir well.
Fold the cooled onions into the cream. Add the fresh parsley now.
Put the dip in the fridge. Wait for one hour. Serve with chips.
- Be patient with the onions. Low heat is best.
- Always use full-fat sour cream. It tastes much richer.
- Let the onions cool. Hot onions melt the cream.
- Make it a day early. The flavor gets better.
- Use thick potato chips. They hold the dip well.
