Equipment

  • One large mixing bowl.
  • A wooden spoon or spatula.
  • One 9x13 inch baking pan.
  • Measuring cups and spoons
  • Plastic wrap or a clean towel.

Ingredients
  

  • 4 cups of all-purpose flour.
  • 2 teaspoons of kosher salt.
  • 2 ¼ teaspoons of active dry yeast.
  • 2 cups of warm water.
  • 4 tablespoons of extra virgin olive oil.
  • 2 tablespoons of fresh rosemary.
  • 1 teaspoon of sea salt for topping.

Instructions
 

  • Combine flour, yeast, and salt in a bowl. Add warm water and stir until sticky.
  • Cover the bowl with plastic wrap. Let it sit for one hour. It should double in size.
  • Pour olive oil into your baking pan. Spread it to cover the bottom and sides.
  • Put the dough into the oiled pan. Stretch it gently to reach the corners.
  • Let the dough rest again for 45 minutes. This makes the bread very light.
  • Poke deep holes in the dough with fingers. Drizzle more oil and add fresh rosemary.
  • Bake at 425°F for about 20 minutes. The top should be a beautiful golden brown.

Notes

  • Use high-quality olive oil for better flavor.
  • Make sure your water is warm, not hot.
  • Do not rush the rising time.
  • Add garlic or olives for extra taste.
  • Sprinkle flaky sea salt on top before baking.
