Ingredients
  

  • 4 cups crumbled CORNBREAD
  • 8 slices cooked BACON
  • 2 cups diced TOMATOES
  • 1 cup chopped GREEN BELL PEPPER
  • 0.5 cup chopped RED ONION
  • 15 oz drained PINTO BEANS
  • 11 oz drained SWEET CORN
  • 2 cups shredded CHEDDAR CHEESE
  • 1 cup MAYONNAISE
  • 0.5 cup SOUR CREAM
  • 1 packet RANCH SEASONING MIX

Instructions
 

  • Bake your favorite sweet cornbread in the oven using a standard baking pan. Let the hot cornbread cool down completely on your counter before touching it.
  • Fry the smoky bacon strips in a hot skillet until they are very crispy. Place them on paper towels to drain excess grease, then crumble them into small bits.
  • Chop the fresh tomatoes, green bell pepper, and red onion into small, uniform pieces. Rinse and drain your canned pinto beans and sweet corn thoroughly in the sink.
  • Whisk the smooth mayonnaise, sour cream, and dry ranch seasoning together in a small bowl. Stir the mixture vigorously until the dressing becomes completely smooth and creamy.
  • Crumble half of your cooled cornbread into the bottom of a large glass trifle dish. Spread half of the pinto beans and sweet corn evenly over the bread layer.
  • Add the chopped tomatoes, green peppers, and red onions gently on top of the corn. Pour half of your creamy ranch dressing over these colorful vegetable layers.
  • Sprinkle half of the savory shredded cheddar cheese and crumbled bacon over the dressing. Repeat all the layers one more time using the remaining ingredients in the same order.
  • Cover the glass dish tightly with plastic wrap to keep it fresh. Place the completed salad in the refrigerator for at least two hours before serving it.
