Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon powder

  • 3 large eggs

  • 3 cups grated carrots

Instructions
 

  • Preheat your oven to 350°F first.
  • Grease both cake pans with butter.
  • Line them with parchment paper carefully.
  • This prevents sticking later on.
  • Combine flour, baking soda, and cinnamon.
  • Add salt to the mixture too.
  • Whisk everything together until well combined.
  • Set this bowl aside for now.
  • Beat eggs in a large bowl.
  • Add oil and sugar gradually while beating.
  • Mix until everything is well combined.
  • Add vanilla extract and mix again.
  • Pour dry ingredients into wet mixture.
  • Fold gently until just combined together.
  • Don't overmix the batter at all.
  • Add grated carrots and walnuts now.
  • Fold them in gently and carefully.
  • Divide batter evenly between prepared pans.
  • Bake for 35-40 minutes in oven.
  • Test with a toothpick for doneness.
  • It should come out clean completely.
  • Let cakes cool for 10 minutes.
  • Remove from pans onto cooling rack.
