Ingredients
  

  • 2 cups raw pecan halves
  • 1/2 cup granulated white sugar
  • 1/4 cup light brown sugar
  • 1/4 cup unsalted butter
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Pinch of cayenne pepper optional

Instructions
 

  • Set your oven to 350°F. Line your baking sheet with parchment paper. This prevents the pecans from sticking badly.
  • Add butter to a saucepan. Melt it over medium heat slowly.
  • Add both sugars and water next. Stir until everything dissolves completely. This takes about 2 minutes.
  • Mix in vanilla, cinnamon, and salt. Add cayenne if you like spice. Stir well to combine all ingredients.
  • Pour pecans into the sugar mixture. Stir until they're completely coated. Make sure every pecan gets covered.
  • Transfer pecans to your prepared sheet. Spread them in a single layer. Don't let them overlap too much.
  • Bake for 12-15 minutes total. Stir them once at 7 minutes. Watch closely to prevent burning.
  • Remove from oven and let cool. They'll crisp up as they cool. Break apart any stuck-together pecans gently.
