Ingredients
  

  • 2 cups all-purpose flour.
  • 1 cup granulated sugar.
  • 2 teaspoons baking powder.
  • 1/2 teaspoon salt.
  • 1/2 cup unsalted butter melted.
  • 1/2 cup whole milk.
  • 1 large egg.
  • 1 1/2 cups fresh blueberries.
  • 1 tablespoon coarse sugar for topping.

Instructions
 

  • Preheat your oven to 375 degrees. Line your muffin tin with paper liners.
  • Whisk flour, sugar, and baking powder in a bowl. Add the salt and stir it well.
  • In another bowl, mix melted butter and milk. Whisk in the egg until smooth.
  • Pour the wet mix into the dry mix. Stir gently until just combined. Do not overmix.
  • Gently fold in the fresh blueberries. Use a spatula to keep berries whole.
  • Scoop batter into the muffin cups. Fill them about three-quarters full.
  • Sprinkle coarse sugar on top of each muffin. This adds a nice crunch.
  • Bake for 20 to 25 minutes. A toothpick should come out clean.

  • Use fresh berries for the best flavor.
  • Toss berries in flour so they don't sink.
  • Do not overwork the dough.
  • Keep the butter melted but not hot.
