- 1 pound beef tenderloin sliced thin.
- 16 ounces wide egg noodles.
- 4 tablespoons unsalted butter.
- 1 pound cremini mushrooms sliced.
- 1 small white onion diced.
- 2 cloves garlic minced.
- 1/4 cup cognac or beef broth.
- 2 cups beef stock.
- 1 cup sour cream.
- Salt and black pepper to taste.
- Fresh parsley for garnish.
Cook the egg noodles in salty water. Drain them and set them aside.
Melt butter in a large skillet. Brown the beef strips quickly. Remove the beef from the pan.
Add more butter to the same pan. Cook mushrooms and onions until soft. Add the garlic last.
