Ingredients
  

  • 2 pounds beef chuck roast cubed.
  • 1/4 cup all-purpose flour.
  • 1 teaspoon salt.
  • 1/2 teaspoon black pepper.
  • 2 tablespoons olive oil.
  • 1 medium yellow onion chopped.
  • 3 cloves garlic minced.
  • 4 large carrots sliced.
  • 3 large potatoes cubed.
  • 4 cups beef broth.
  • 2 tablespoons tomato paste.
  • 1 teaspoon dried thyme.
  • 2 bay leaves.

Instructions
 

  • Mix flour, salt, and pepper in a bowl. Toss the beef cubes to coat them well.
  • Heat oil in your pot over medium heat. Brown the beef on all sides. Remove the meat and set it aside.
  • Add onions and garlic to the same pot. Cook until they are soft and fragrant.
  • Stir in the tomato paste. Pour in the beef broth slowly. Scrape the bottom of the pot for flavor.
  • Add beef, carrots, potatoes, and herbs back in. Ensure the liquid covers most of the food.
  • Lower the heat and cover the pot. Simmer for about two hours. The beef should be very soft.

  • Use beef chuck roast for the best texture.
  • Do not crowd the pan when browning meat.
  • Cut veggies into equal sizes for even cooking.
  • Let the stew sit for ten minutes before serving.
  • Add a splash of red wine for deeper flavor.
