Equipment

  • Large Mixing Bowl
  • Electric hand mixer
  • Measuring cups and spoons
  • Baking sheets
  • Parchment paper
  • Wire cooling rack
  • Small cookie scoop.

Ingredients

  • 1 cup unsalted butter softened.
  • 1 cup white granulated sugar.
  • 1 large egg.
  • 1 teaspoon almond extract.
  • 1/2 teaspoon vanilla extract.
  • 2 cups all-purpose flour.
  • 1/2 teaspoon baking soda.
  • 1/2 teaspoon salt.
  • 1 cup sliced almonds for topping.

Instructions

  • Set your oven to 350°F before you start. Line your baking sheets with parchment paper.
  • Mix the butter and sugar in a large bowl. Use a mixer until the texture is fluffy.
  • Beat in the egg and the flavored extracts. Mix until the batter is very smooth.
  • Whisk the flour, baking soda, and salt together. Slowly add this to the wet mixture.
  • Use a scoop to make small dough balls. Place them two inches apart on the sheet.
  • Press sliced almonds gently into the top of each ball. This adds a nice crunch.
  • Bake for 10 to 12 minutes. The edges should be a light golden brown.
  • Let them sit on the pan for five minutes. Move them to a wire rack to finish.

Notes

  • Use room temperature butter for easy mixing.
  • Do not overmix the dough once flour is added.
  • Toast the almonds briefly for a deeper flavor.
  • Watch the oven closely so they stay soft.
  • Store them in an airtight container for freshness.
